Easy Earth Day Sugar Cookies

It’s SO easy to make drop sugar cookies that look like the Earth! They’re a great Earth Day activity for kids or the perfect sweet treat for an outer space party!

I first made these Earth cookies many moons ago for a space party that we were hosting. They’re actually where the inspiration for my easy camo sugar cookies came from. The technique for making color-swirled drop cookies is perfect for creating any variety of tie dyed color cookies. Hmm.. fun summer idea maybe?!

Part of what makes these cookies so easy, is that they start with bagged sugar cookie mix! I mean, you really can’t go wrong with that, right? Typically, all you need to add is an egg and softened butter, and you’re in business. I’m ALL about shortcuts in the kitchen! 

For these Earth Day cookies, you’ll also need blue and green food coloring. Make sure to add enough color to get a bright vibrant dough! The cookies will bake pretty close to that color. 

When I’m forming the dough balls for the Earth cookies, it’s fun to play around with different methods for forming the color swirls. Technically, you could do nothing more than taking the pinch of each color and rolling them between both hands and get great results. However, I’ve found that I like the results best when you take smaller pinches of green and put them on either side of the blue.

Ingredients

  • 1 (17.5 ounce) package sugar cookie cookie mix
  • 1 stick (1/2 cup) butter, softened
  • 1 egg
  • Food color (blue and green)

Instructions

  1. Preheat the oven to 375ºF (350ºF for dark or nonstick cookie sheets).
  2. In a large bowl, mix sugar cookie mix, butter, and egg until it forms a soft dough. Separate the dough evenly into 2 bowls.
  3. Use the food coloring to dye the cookie dough in one bowl bright blue, and the dough in the other bowl bright green.
  4. Take a small pinch of each color of dough in your hand, and use both hands to roll it up into a ball the size of a rounded tablespoon, or about an inch in diameter.
  5. Place each ball of cookie dough on a parchment lined cookie sheet approximately 3 inches apart.
  6. Bake for 8 to 10 minutes. Allow the cookies to cool on the baking sheet for about a minute, before transferring to a cooling rack to cool completely.
