Ingredients

  • 1 Tablespoon (21 g) honey
  • 1 Tablespoon extra-virgin olive oil
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoon fine sea salt
  • 3 cups (400-500 g) cubed watermelon, about 1 small watermelon
  • 1 cup (140 g) fresh blueberries
  • 4 ounces (113 g) cubed goat cheese
  • ¼ cup fresh mint leaves, torn

Instructions

In a small bowl, whisk together the honey, olive oil, lemon juice, and sea salt.

In a large mixing bowl, toss together the cubed watermelon and blueberries. Toss
with dressing.

Gently stir in the diced goat cheese and sprinkle with mint leaves.
