Ingredients
- 1 Tablespoon (21 g) honey
- 1 Tablespoon extra-virgin olive oil
- 1 Tablespoon fresh lemon juice
- ¼ teaspoon fine sea salt
- 3 cups (400-500 g) cubed watermelon, about 1 small watermelon
- 1 cup (140 g) fresh blueberries
- 4 ounces (113 g) cubed goat cheese
- ¼ cup fresh mint leaves, torn
Instructions
In a small bowl, whisk together the honey, olive oil, lemon juice, and sea salt.
In a large mixing bowl, toss together the cubed watermelon and blueberries. Toss
with dressing.
Gently stir in the diced goat cheese and sprinkle with mint leaves.
