We survived sport season! Can I get a hallelujah?! 

Normally, I don’t mind practice nights too much, but with schedules like the one we had this season, dinner time was truly a challenge. There was very little time to get dinner on the table, which is why I loved this Instant Pot taco mac recipe so much!

The recipe comes together fairly quickly, and while waiting for the Instant Pot to come to pressure, adds a tiny bit of additional time, this is still a meal that can be on the table within half an hour. 

While we were living in the hotel over the summer, Instant Pot taco pasta became a staple for our Taco Tuesdays. It’s quick and easy– perfect for hotel-living when all you’ve got is your pressure cooker (yes, I travel with my Instant Pot) and some utensils. I tweaked the original recipe that I found from FoodySchmoody to make it just a pinch simpler when cooking with limited resources.

Instant Pot Taco Mac is a fantastically easy recipe for pressure cooker beginners! It cooks up quickly, making it the perfect meal for busy nights!

Additional Time 10 minutes
Total Time 25 minutes

Ingredients

  • 1 pound lean ground beef
  • 1 (1 ounce) packet taco seasoning
  • 1 (8 ounce) can tomato sauce
  • 1 (14.5 ounce) can beef broth
  • 2 cups elbow pasta, uncooked

Instructions

  1. Set Instant Pot to sauté setting. When the pot is hot, add the ground beef, breaking it apart and stirring until completely browned. Turn off sauté setting.
  2. Stir taco seasoning and tomato sauce into the browned ground beef until mixed through completely. Pour in beef broth.
  3. Top the ground beef mixture with elbow pasta. To avoid it sticking to the bottom, do not stir, and simply ensure that all elbows are covered with liquid.
  4. Set the pressure cooker to manual and cook on high pressure for 4 minutes.
  5. When cooking time is complete, allow the pressure to release naturally for 10 minutes, then carefully turn valve to allow the remaining pressure to release.
  6. Stir the cooked contents of the Instant Pot to mix completely. Serve hot, topping with traditional taco toppings, such as: lettuce, tomato, cheese, sour cream.
