Easy Brownie Mix Halloween Cookies

My favorite types of recipes are either quick or easy. This one is a little bit of both! It requires only a few easy to find ingredients, plus it mixes up and cooks pretty quickly. Best of all, these cookies are SO. FREAKING. GOOD! And they’re kinda cute!

When it comes to shortcuts in the kitchen, I’ll take them all! Like my Instant Pot potato soup recipe that uses diced hash browns to avoid peeling and cutting potatoes. Yes, please! This cookie recipe uses boxed brownie mix as an ingredient to save time on measuring out dry ingredients. With brownie batter as a base, the end result is cookies that are moist, chewy, and so rich!
You can use any standard-sized brownie boxed mix for this recipe. Standard-sized, not family sized. I chose to use a Ghirardelli brownie mix after reading about a friend’s brownie mix taste test. Ghirardelli was their taste test champion, with (I believe) Great Value coming in second. Either way, they’re brownies, I don’t really think you can go wrong!
For a special spooky touch, I used an M&M ghoul’s mix that features Halloween-colored candies and Wilton’s candy eyeballs– a personal favorite for Halloween treats! For best results, I recommend saving some of the M&Ms until the ended and adding them to the tops of the cookie batter along with the candy eyeballs.
Easy Brownie Mix Halloween Monster Cookies
A box of brownie mix plus festive Halloween candies easily combine to create decadently delicious cookies that are sure to be a hit! No tricks, all treats!
Ingredients
- 1 box brownie mix
- 1/4 cup vegetable oil
- 2 eggs
- 1/4 cup all-purpose flour
- 1 cup M&M candies
- Candy eyeballs
Instructions
- Preheat the oven to 325º F.
- In a large bowl, combine boxed brownie mix and flour. Add in vegetable oil and eggs and mix until just combined.
- Fold M&M candies into cookie batter, reserving about 1/4 cup to add to tops of cookies, if desired.
- Using a cookie scoop (approximately 1.5 tablespoons), scoop cookie batter onto a parchment lined cookie sheet about 2 inches apart. Add candy eyeballs and extra M&M candies to the top of each scoop of batter.
- Bake cookies in the preheated oven for 12-14 minutes, or until baked through. Cookies will be soft, but shouldn't fall apart.
- Cool cookies slightly on baking sheet before transferring to cooling rack, to cool completely. Store in an airtight container.
