Good morning lovelies! It’s been a while! The flu hit our home hard these last couple of weeks. More on that tomorrow! Right now I want to share this delicious dish that is simple to make and perfect for breakfast or brunch!

With everyone on the mend and finally up to eating real meals, I wanted to make something special for breakfast! I always keep a least a can or two of BUSH’S® Savory Beans on hand for a quick meal, and knew they’d be perfect for this! I love the ease of incorporating beans into my family’s meals! Just quickly heat BUSH’S Savory Beans and they’re ready to eat!

BUSH’S Savory Beans (found at Walmart!) are made using only the best beans and simmered in a savory sauce. After over 110 years, nobody knows beans better than BUSH’S! Serving them alongside eggs is a great way to pack in the protein for a great start to the day! 

For this dish, I poured the BUSH’S Black Bean Fiesta Savory Beans into a microwave-safe bowl, covered, and microwaved for 2 minutes, while I prepped the eggs. For each plate, I scrambled two eggs in a bowl, then cooked them in one solid layer in a small pan. Basically like an omelette!

To serve, fold the eggs in half on each plate and spoon some of the hot beans over. One can of beans is the perfect size for our family (or four adults). Top with shredded cheddar cheese and a drizzle of sour cream. If you happen to catch an avocado in the 30 seconds that it’s actually ripe, toss it on top for even more deliciousness. Clearly, I missed my chance, but these eggs and beans were to die for nonetheless! 

It all comes together in less time that it took me to type up this post and is sure to be a hit! Both Adri and John requested a second helping. And with as easy as it was to toss together, why not?!
