Pineapple Cherry Rum Punch Cocktail Recipe
Summer is unofficially upon us and I’m counting down the days until I’m sitting poolside with a tropical drink. The craziness commences this week, with the movers arriving on Monday Tuesday! This move has started out about as unorganized as possible. But in two weeks, I’ll be back at my parents’ house with a glass pineapple cherry rum punch in hand! Can’t wait!
Since the mover’s won’t pack up any liquids or perishable, I’ve gotten pretty good at using them up! The half-empty jar of cherries in the fridge? I’ll take the juice and fruit, please! The cans of pineapple juice that have been sitting in pantry since we moved in? Dump ’em in! Oh, and the bottle of rum sitting in the bottom of the freezer? Perfect!
Meals have certainly been interesting lately! For the first time in five moves, I actually feel like I’ve done a good job of cleaning out the fridge/pantry. We really don’t have anyone to share our leftovers with here, so I started planning early on. Our meal prepping has significantly helped with not overbuying as well!
This beautifully delicious pineapple cherry rum punch is pretty simple to make! To achieve a cool ombre affect, layer the juices slowly in the glass. For instant summer in a glass, just pour it all in together, and enjoy! I’ve made this with regular old Bacardi light rum, but I think using coconut rum would kick it up a few notches!
