You know what cereal is great for? Breakfast! Know what else? Dinner! And one more? No, not lunch, banana bread! Yep, that’s right! Cereal, more specifically Honey Bunches of Oats*, in my banana bread recipe!

As a kid, I started making a banana bread with cereal in it. At one point, there was a cereal box with a recipe on it. As the years have passed, I’ve developed my own bread recipes, but continue to add that one secret ingredient.

I like to go with Honey Bunches of Oats Honey Roasted. The little oat clusters always add this super fun crunchy surprise. Honey Bunches of Oats with Almonds would also make a great choice if you like to put nuts in your banana bread. There are actually a variety of Honey Bunches of Oats flavors to satisfy the entire family. Walmart even has a new Honey Bunches of Oats Gluten Free Chocolate (and new Crunch O’s and Kung Fu Panda RTE Cereals), so the flavors of bread are endless!

Since we constantly have bananas that are browning in the house, and we usually have a box or two of Honey Bunches of Oats, since all three girls love to snack on it, I thought it might be time to bring back this recipe.

Veronica has really been into helping in the kitchen lately, and since this is a pretty easy recipe to master, she was able to help out no problem. We beat our wet ingredients, combined the dry ingredients, mixed them together, then got to baking.

Honey Bunches of Banana Bread

Honey Bunches of Banana Bread
Cook Time 50 minutes
Total Time 50 minutes

Ingredients

  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 3 over ripened bananas
  • 2 eggs
  • 1 1/2 cups Honey Roasted "Honey Bunches of Oats" cereal
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350.
  2. In your mixing bowl, cream butter and sugar together. Add banana, and beat until smooth. Add in eggs and mix until fully combined.
  3. In a separate bowl mix together the Honey Bunches of Oats Honey Roasted cereal and the remaining dry ingredients.
  4. Combine the wet and dry ingredients, then pour into a lightly greased loaf pan.
  5. Bake for 50-60, or until wooden toothpick inserted in center comes out clean.
  6. Cool the bread in the pan for about 5 minutes, then move to wire rack until completely cooled.

Just like cereal, I love banana bread in the morning; but it makes a great snack in the afternoon, and even a healthy dessert after dinner.
