Can you think of anything more satisfying than a quick and simple healthy meal? I would venture to say probably not. One of my favorite go-to meals is a tasty pasta salad. When paired with some grilled chicken, you’ve got yourself a delicious meal!
Growing up, I can remember my parents putting this pasta salad together frequently. It was perfect for lunch on the go, or for snacking on while out on the boat. Now, as an adult, it’s one of the first dishes that comes to mind whenever I have to take a side dish to an event.
With as tasty as this pasta salad is, it’s hard to believe how simple it is to make. All it takes is some bell peppers, red onion, cheese, and tri-color rotini, combined with Wish-Bone® Italian Dressing. With it’s robust flavor, packed full of herbs, Wish-Bone® Italian Dressing is the perfect topping for this salad.
To make a full dinner out of my simple pasta salad, I love to add some grilled chicken on top! It’s a balanced meal with plenty of protein! To keep things simple, I top the salad with Tyson® Grilled & Ready chicken that I picked up at Walmart! It comes fully cooked, so it only takes a few minutes to prepare and toss on top!
Pasta Salad & Grilled Chicken
Ingredients
- 12 oz Tri-Color Rotini
- 1 large Red Bell Pepper, diced
- 1 large Green Bell Pepper, diced
- 1 small Red Onion, finely diced
- 1 cup Wish-Bone® Italian Dressing
- 1 lb Colby Jack cheese, cubed
- Tyson® Grilled & Ready Chicken
Instructions
- Bring salted water to a boil. Add uncooked tri-color rotini pasta, and cook to al dente. Drain and rinse with cold water.
- In a large bowl, combine peppers, onion, Wish-Bone® Italian Dressing, and cheese, Stir to combine.
- Once pasta is completely cooled, add to vegetable mixture, and toss to coat evenly with dressing.
- Serve in bowls and top with prepared Tyson® Grilled & Ready Chicken.
