  • Frozen diced hash brown potatoes – The bulk of the ease of this recipe comes from not having to peel or dice potatoes. Simply pour in a bag of frozen diced hash brown potatoes, and you’re ready to go!
  • Condensed cream of chicken soup – Much of the flavor comes from using condensed cream of chicken soup. Alternatively, cream of mushroom or cream of celery could work well!
  • Chicken broth – Ya can’t quite have a soup without a liquid base, right?! Veggie broth works here too! Chicken stock can also be used for a richer, more intense flavor.
  • Bacon Bits – For extra fun flavor. These may be omitted if desired.
  • Cream cheese – Cream cheese adds the creaminess to the recipe. Be sure to wait to add it in until the last 30 minutes or so of cooking, to avoid curdling.

Unlike the Instant Pot version, which can burn if additional ingredients are added in, this Crock Pot version of the potato soup is perfect for adding extras such as:

How to make Slow Cooker Potato Soup

Once again, we’re keeping things simple here, folks!

  1. Dump the bag of frozen hash brown potatoes into a 6-quart Crock Pot/slow cooker. Pour cream of chicken soup, chicken broth, and bacon bits over the potatoes, and stir to mix.
  2. Allow the potato soup to cook covered on low heat for 8 hours. In the last 30 minutes of cooking, add in the cream cheese and continue cooking on low.
  3. Stir and blend (if desired) prior to serving.

Serving Suggestions

My absolute favorite way to serve this potato soup is either in a bread bowl, or with some thick crusty bread on the side, to really soak up all the creamy potato flavor! Hawaiian rolls are also an excellent choice! And for a lighter option, a crisp salad always pairs well with soup! Don’t forget garnishes, like:

  • Shredded cheese
  • Bacon bits
  • Green onion
  • Croutons
  • Oyster crackers

Storage and Leftovers

Leftovers of this slow cooker potato soup (if you have any) will keep in the fridge for up to 5 days in an airtight container. Reheat in the microwave, keeping in mind that additional chicken broth might be necessary.

Unfortunately, this isn’t a recipe that I recommend freezing. Due to the dairy, it does not defrost well and may end up separating.

  • 32 ounces chicken broth or stock
  • 2 10.5 ounce cans condensed cream of chicken soup
  • 1/4 cup bacon bits
  • 8 ounces cream cheese (one block)
