I can hardly believe that Thanksgiving is right around the corner! Since we’re traveling for Christmas, we’re staying put for Thanksgiving this year and just hanging out on our own at home.
My goal for our Thanksgiving meal this year is to just keep it simple. It’s just the 5 of us, and the kids are picky AF. Really, I’m just sticking to the basics– some turkey, and a few side dishes that I know the kids will eat.
Instead of doing the whole ordeal that is a turkey, I figured a turkey breast would be perfect. I’ll be able to just toss it in the slow cooker in the morning, and have it ready by “dinner time.” Which in our family is more like a late lunch.
To make the mashed potatoes super easy, I plan to Crock Pot those as well. No peeling or chopping, just throwing the whole uncooked potatoes with their skin into the slow cooker. For this, I find that Yukon gold or baby red potatoes work the best. I love the extra little texture that comes from being able to leave the skin on the potatoes.
This recipe starts out simply with broth, garlic, butter, and potatoes in the slow cooker. After a few hours of cooking on low, I like to toss in my favorite mashed potato mix ins (more butter, duh!) from my extra creamy easy mashed potato recipe, plus some cheddar cheese for extra flavor!
When I made these easy mashed potatoes a few weeks ago, they were the PERFECT accompaniment to those delicious Crock Pot grape jelly and BBQ sauce meatballs that you see all over Pinterest. Just spoon the meatballs and sauce right on top! So tasty!
The end result is effortless mashed potatoes with skin and a delicious punch of garlic. There’s never enough garlic, amiright?!
The BEST Slow Cooker Garlic Mashed Potatoes
Delicious garlic mashed potatoes cook up effortlessly in the slow cooker. Just toss them in without the hassle of having to peel or chop. The perfect side dish for busy holiday meals!
Ingredients
- 1/2 cup broth
- 2 1/2 pounds baby red potatoes
- 6 cloves garlic, minced
- 6 tablespoons butter, divided
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese, optional
Instructions
- Pour broth into a slow cooker set to low. Add in potatoes that have been washed. Top potatoes with minced garlic.
- Set aside 2 tablespoons of butter. Slice 4 tablespoons of butter into several slices. Top minced garlic bits with slices of butter.
- Cover the slow cooker and cook on low temperature for at least 5 hours.
- Once potatoes have cooked, use a hand masher or mixer to mash the potatoes. Stir in the remaining butter, cubed cream cheese, sour cream, and shredded cheddar cheese, if desired.
- Allow to continue cooking for an additional 30 minutes, to ensure all ingredients heat through.
