One of the things I’ve enjoyed most while being stuck at home is snacking on fresh pico de gallo. I throw together at least one batch a week. And since I’ve been using so many tomatoes, I even decided to try my hand at growing my own. Along with my own cilantro, of course!

I scooped out and cleaned up the seeds from only one roma tomato and ended up with a TON of baby tomato sprouts. About 7 of these spouts ended up in my big patio planter, and the rest will find new homes with our neighbors eventually.

Once upon a time, wayyy back in Hawaii, we had tomato plants growing out of the gutters off our roof! Sadly, the maintenance people came and took them down, but those few tomatoes that we did get to enjoy were rather tasty. I’m hoping I can get the same results this time!

The pico de gallo recipe is fairly easy. After all, I like to keep things simple in the kitchen. My pico de gallo uses the tomato and cilantro mentioned above, plus red onion, lime, and salt! All the fresh, bright flavors, please!

I’m not brave enough to get my own lime tree going yet, but between the pico and all the margaritas we’ve had lately, I sure wouldn’t mind having them readily accessible. Maybe if we ever move back home to Florida.

The one ingredient that many might find missing from this particular version of pico de gallo is jalapeño. While I don’t mind a kick of spice, I like to keep this pico mild, so that the kids can enjoy it along with us. I very well could just scoop out the seeds from the jalapeño, but why add that extra step, when this recipe truly doesn’t need it.

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 pound roma tomatoes, (about 6-7 medium tomatoes)
  • 1/2 red onion
  • 1/2 cilantro bunch
  • 1 lime
  • Salt

Instructions

  1. Slice off the top of each tomato, and slice each tomato in half length-wise. Use a spoon to scoop out the seeds, then dice the tomato and add it to a bowl.
  2. Dice the red onion and chop the cilantro, and add it to the bowl with the tomato.
  3. Squeeze the juice from an entire lime into the mixture and add sprinkle with salt, to taste. Stir to combine. Store in the fridge in an airtight container.

Notes

Half a bunch of cilantro should equal about 1/2 cup when chopped.

The juice from one lime should equal about 2 tablespoons or 1 ounce of juice.

Aside from just using this homemade pico de gallo on its own, it’s a fantastic mix in for a super easy guacamole. Just mix in a cup of this pico, a little more lime juice, and a few squashed avocados together and you’ve got yourself some great guac!
