Since we’ll be staying the hotel a little while longer, I finally went ahead and ordered an Instant Pot a few weeks ago. Originally, it was going to be my first purchase upon moving into our new house. But because it’s been a good long while since we’ve eaten a home cooked meal, I decided not to wait.

You might be familiar with using an Instant Pot for dinners, but what about breakfast? Yes, your Instant Pot is a versatile kitchen appliance that can be use for ANY of your daily meals. Whether it’s breakfast, lunch, or dinner, you can turn on your Instant Pot for a variety of meal ideas. These breakfast ideas might be helpful for a holiday morning or a busy brunch. Rice Pudding for Breakfast. Need a metabolism boost? Try rice pudding with cinnamon! This superfood is a base ingredient for rice pudding, and it can help regulate blood sugar too. For a healthier swap, try replacing traditional milk in your rice pudding recipe with coconut milk for extra flavor and nutritional value.

Coconut Oatmeal. Overnight oatmeal is an easy recipe for breakfast, but when you have an Instant Pot you don’t have to overnight it! Steel cut oatmeal is full of healthier ingredients to provide a fresh start to your day. Steel cut oatmeal, coconut milk, fresh shaved coconut, cinnamon, water, and bananas can turn regular oatmeal into a coconut flavored (and healthy!) treat. YUM! By adding bananas to this dish, you give yourself a burst of energy with potassium and the ground cinnamon is helpful for your immune system.

Breakfast in a Jar. When you prepare meals in a jar, it makes it easy to grab and go! The basic recipe for breakfast in a jar for the Instant Pot is to layer egg along with different ingredients in small mason jars with lids. For example, you could add avocado for a superfood boost for vegetables. Leave the jars uncovered and start on high pressure for five minutes. Switch to the NPR setting for five minutes and your breakfast is done!

Egg Casserole. Swap the oven for your Instant Pot with this idea. You can use hash browns, chopped onions, ham, shredded cheese (I prefer cheddar!), and large eggs with milk to recreate this in your home.

Hard-boiled eggs. This one is a no-brainer, but the Instant Pot makes it SO EASY for hard-boiled eggs! Make sure to add a cup of water in the bottom and use a steamer basket to hold your eggs.

Have a few extra hours? You can create homemade yogurt too! There are other models that have this setting as well in both six and eight quart capacities. This one does take time, but once ready you can scoop into mason jars to use throughout the week.
