Frozen Prosecco Pops

I like to keep things bright and bubbly. This boozy Prosseco pop is both!

Bright pink prosecco + dragon fruit frozen pops

After using some of my dragon fruit on making mojitos, I knew I wanted to add it to more alcoholic beverages. I mean, it just makes everything so preeetty! Inspired by the champagne bottle molds that came in my FabFitFun box, I decided a bright pink Prosecco pop would be perfect!

Have y’all seen the pin on Pinterest for a lemonade (I think) that is this color?! Only, the limes next to it are a radioactive green color? Yea. This is not that. Dragon fruit is naturally this bright and colorful. No editing or radioactive fruits necessary!

Dragon fruits may be scary looking from the outside, but can easily be cut open to reveal the soft juicy inside. I’ve been asked a few times what they taste like, and the only comparison that I can make, is that they’re similar to kiwi, down to their little black seeds.

I considered blending the fruit to make these pops, but I really wanted to have the little seeds floating around, so I just muddled instead. Because of this, there are some chunks of fruit in some of the pops. Since neither the dragon fruit or Prosecco are overly sweet, a little honey in the muddled mixture makes for a perfect summer sweet treat!

One bottle of Prosecco plus half of a dragon fruit are just the right amount to yields 10 – 3oz pop along with a drink for the chef!
