Cake Batter Ice Cream Freezer Pops

I want cake batter flavor, not frozen cake batter! So for my birthday, I experimented with making no-box mix cake batter ice cream.

At first I wasn’t too sure where to start, but then I figured if I wanted cake flavor, I had to look at a cake recipe! What are some of the ingredients in a basic cake recipe? Sugar, butter, and vanilla. Once I got that, putting together a cake batter ice cream was simple!

To avoid having to dissolve sugar into milk, I chose to use sweetened condensed milk as a base. It’s so thick and creamy, so you know there’s no going wrong with that! I also added heavy whipping cream, as I’ve had fantastic luck making ice cream with it. Next was the vanilla, followed by butter flavor, and a pinch of salt.

Butter flavor was used instead of butter due to sheer laziness. After all, it’s my birthday and I’ll be lazy if I want to! My reasoning was not wanting to have to melt it, then mix it into a cold liquid, and have it solidify instantly. Maybe next time, I’ll take the time to heat and combine all ingredient.

To add to this little culinary adventure. I tossed in some rainbow sprinkles, jimmies, if you will, to the freezer molds (aff link). With freezer pops, they quickly sank to the bottom. However, if I do attempt an actual ice cream in the future, I’ll just mix them in towards the end, once the batter has thickened a bit.

After a night in the freezer, I was so thrilled with how my cake batter ice cream freezer pops turned out. Smooth, creamy, and delicious!

If I did it again, I’d leave out the sprinkles, but otherwise, this is a tasty treat, perfect for hot summer days!

Cake Batter Ice Cream Freezer Pops

Ingredients

  • 1 pint heavy whipping cream
  • 14 oz can sweetened condensed milk
  • 2 tsp vanilla
  • 2 tsp butter flavoring
  • pinch of salt

Instructions

  1. In a bowl, thoroughly combine all of the ingredients listed.
  2. Pour mixture into freezer pop mold, cover and insert wooden sticks. Freeze overnight.
  3. Allow water to run over each freezer pop for a few seconds, before attempting to remove from mold.
