Breakfast for Dinner
Sundays have become our ultimate lazy days. We usually take it pretty easy on the weekends, but Sundays have much less going on. Saturdays typically have been some sort of low-key activity, but the last few weeks Sundays have included nothing more than a Redbox movie and snack.
Along with lazy afternoons, come lazy dinners. In my book, breakfast for dinner is the ultimate lazy way to go! Sure, we could just pour ourselves a bowl of cereal, but where would the fun be in that?!
Dinner last night included cheddar scrambled eggs, with sausage, and roasted potatoes, but here are a few more of my favorite breakfast for dinner options.
Cornflake Crusted French Toast– except instead of Cornflakes, you need to get kind of crazy and try Cinnamon Toast Crunch or Frosted Flakes. I’m thinking I might even give Cap’n Crunch a go next time!
Spinach quiche is also a HUGE favorite of mine! It’s simple to toss together in a pinch and is so delicious! This is the recipe I use, minus the bacon. The bacon stays on the outside, so that we can enjoy it on it’s own.
A favorite of the girls’ is pancakes! Instead of keeping it simple with boxed mix,we prefer a simple homemade version. It makes a fun and interactive experience for the older two.
This french toast casserole is always a hit as well. I’ve used all sorts of different breads other than challah, with great results. I like this recipe, because you can feed a ton of people with minimal prep work.
