Chili Nation Loco Moco

linqia-hormelDown in Hawaii, we tend to do things a bit differently than the rest of the country. This especially applies to food. When we first arrived on Oahu, I was horrified by the though of eating Loco Moco for breakfast. Now that we’ve been here for a while, I’ve warmed up to the idea and even made a bowl of my own using HORMEL® Chili, America’s #1 chili.

Traditionally, Loco Moco is a dish consisting of rice, burger patties, fried eggs, and gravy served for breakfast. It’s so popular, that you can even get it at the big chain fast food drive thru’s. But why bother with a drive thru when you can easily make your own version at home?!

I started with the rice cooker and a bunch of rice. I typically use a 1:1.5 rice to water ratio, with a dash of salt and a drop of oil. Usually, I make extra to have it on hand in the fridge, since it’s a favorite snack of mine. If you have some left over rice from dinner that works great too!

While the rice was cooking, I started coring out a pineapple. This is totally unnecessary, but if you want to really add some Hawaiian flare to your breakfast, go for it!

I then poured a can of HORMEL® Chili No Beans into a pan on the stove and heated it over medium low heat.

As the chili heated, I started frying my eggs. By the time the eggs were done, so was the rice and the chili had also heated all the way through.

To throw it all together, I dumped a hefty scoop of rice into the hollowed pineapple and topped it with a heaping spoon of chili and two eggs. I figured there was no need for gravy since the chili has enough liquid of it’s own.

Guys! It was delicious and incredibly easy to make! To make it even easier, you can even ditch the pineapple and use a regular plate.

Chili Nation Loco Moco

An easy to make version of a Hawaiian favorite.

Ingredients

  • 1 15 oz can Hormel Chili No Beans
  • 8 eggs
  • 3 cups Rice, cooked
  • 2 Pineapples, optional

Instructions

  1. If desired, cut each pineapple in half, and hollow to out create bowls.
  2. Heat Hormel Chili on the stove over medium-low heat, stirring occasionally.
  3. Cook eggs as desired.
  4. Equally divide rice into pineapple bowls or plates. Top with Hormel Chili, followed by two eggs each.
  5. Enjoy!
