Green Bean Casserole

Growing up, I absolutely despised green bean casserole. It was soggy, flavorless, and just plain gross. It wasn’t until I started following my own recipe that I grew to love this dish. In fact, when making green bean casserole now, I double the recipe to ensure that I have plenty of leftovers to enjoy.
So, what’s the issue with the traditional green bean casserole recipe? Well, for me, the main issue was always just that it was a sloppy soggy mess. I’ll share a couple of tips for getting the best casserole!
How to avoid soggy green bean casserole
The issue with so many green bean casserole recipes, is that they start with canned beans. I don’t mind canned green beans as an easy dinner time side, but for a casserole, if you start with soggy green beans, you’re going to end up with soggy green beans. No thanks!
Instead, to avoid having a soggy green bean casserole, start with fresh or frozen green beans. The green beans end up softening while cooking, but still retain some texture. I always opt for frozen, as they’re typically washed, trimmed, and ready to go. I’m all about shortcuts in the kitchen! Especially if you’re making a casserole in addition to a million other side dishes for something like Thanksgiving or Easter.
Along with choosing better green bean options, I like to add a bit more flavor over the traditional green bean casserole that comes on the back of the fried onion container. Go ahead and use up that whole can. And while we’re at it, toss in some cream of chicken soup.
Cream of chicken soup? YEP. I mean, does anyone actually enjoy cream of mushroom soup? Swapping out cream of chicken soup for cream of mushroom soup in green bean casserole makes a huge delicious difference.

Green Bean Casserole
Say no to soggy flavorless green bean casseroles! Instead, try this delicious recipe that's full of flavor!
Ingredients
- 2 20 ounce packages frozen cut green beans
- 6 ounce container crispy fried onions, divided
- 2 10.5 ounce cans cream of chicken
- 1/3 cup milk
- 1/8 teaspoon ground black pepper
Instructions
- Preheat the oven to 375º F. Lightly spray a 13x9 baking dish with oil.
- In a large bowl, combine green beans and 1 ½ cup of crispy fried onions.
- In a separate bowl, combine cream of chicken soup, milk, and pepper. Pour cream of chicken mixture over green bean mixture and stir well to combine.
- Transfer green bean mixture to prepared baking dish. Top with remaining crispy fried onions.
- Cover with foil, and bake for 55 minutes. Uncover, then bake for an additional 5 minutes, or until onions start to brown.
