One of my favorite parts of each day is sitting down after school with the girls and snacking, before moving on to homework or activities. At this point in the day, we’ve typically been separated for a few hours (which means they haven’t been driving me crazy), so I love their company and finding out how the day went.
I’ve been doing a whole bunch of experimenting the kitchen recently, and my little helpers are usually the first to sample my creations. Much of what I’ve been making has flavors from home. I’m talking drinks, appetizers, full entrees, and even sweets. I rarely miss Miami, but I always miss the culture and food.
A long time favorite of mine has been my mom’s key lime pie! I was recently challenged, to add my own spin to this recipe featuring Honey Maid graham crackers for Dia Del Niño (Children’s Day), so creating a mash-up seemed like the perfect solution.
To keep it simple, I went with a no-bake cheese cake. And to make it snackable, I down-sized into smaller muffin-sized treats. This one is simple enough for the kiddos to help if you so chose, which I think is usually an added bonus for them!
Mini No-Bake Key Lime Cheesecake

Ingredients
- 1 sleeve, 9 crackers HONEY MAID Honey Grahams, finely crushed
- 4 Tablespoons butter, melted
- 1 Tablespoon sugar
- 2 8-ounce packages cream cheese, softened
- 1 cup sweetened condensed milk
- 1 cup Key Lime juice
Instructions
- Line a muffin tray with 12 paper liners.
- In a bowl, stir together crushed graham cracker, butter, and sugar, until combined well. Evenly spoon this mixture into each muffin well and press down flat.
- In a stand mixer, beat the cream cheese, until smooth and fluffy. While mixer is on, pour in the sweetened condensed milk, followed by the key lime juice.
- Evenly top each graham cracker crust with the cheesecake mixture, then refrigerate for at last 4 hours, before serving. If desired, garnish with lime zest.
